vertaling:MARCUS MEETS MATEUS
by Tove Oskarsson Henckel
That restaurateur Marcus Samuelsson is creative is something we've known for a long time. His recent collaboration with design company Mateus, known for its colourful porcelain, has now produced a set of tableware inspired by both Scandinavia and Africa.
-Tell us about your partnership with Mateus.
-I’ve always admired Teresa and Mateus, and when the chance came along to work with them I was overjoyed and felt that I could really bring something to the table. I’ve always been interested in how tableware is designed, but as a chef I’ve never had control of the process.
-Why did you want to design a dinner service?
-It's an extension of what we do in the kitchen - which, as you know, is the new living room. After 20 years in the kitchen it just seemed the natural thing to do.
-What ideas did you have about the design?
-I wanted to capture the Scandinavian nature aesthetic and parts of my Ethiopian heritage - the patterns recall the African dunes. I also wanted to design a dinner service that goes just as well in an urban apartment as in a summer cottage. This service is timeless.
-How can tableware inspire a meal?
-They go hand in hand, and make the meal exciting and fun. Eating is all about stimulating all the senses. The table setting is part of it.
-Have you got any tips for the table?
-Each occasion is unique. There's a big difference between setting a table for a 5-year old and for a 55-year old. If the guests haven’t met before, make sure not to set out tall flowers or anything else that could block their view of each other.
What kind of food would you serve on your new dinner service?
-A lot of Western food works on classic porcelain like this. And the accompanying items are important too, such as mats and chopsticks.
-You’ve got an artistic streak, you paint, you've designed this tableware; what next?
-Food Republic and Marcus-Samuelsson.com. What we're doing online that makes it possible to enter exciting dialogues with people. Here, creativity is crossed with food and the home and the kitchen.
-Will you be using the porcelain at the Red Rooster, or in your other restaurants?
-Yes, we'll be using it at Norda, which opens in the Clarion Hotel Post in Gothenburg, and at the Red Rooster in Harlem.
-Red Rooster Harlem has proved a terrific hit. How does that feel?
-After all the hard work we put into it of course it's fantastic to receive such acclaim from our guests. It's all about trust, and we must keep trying to be better and to make the guests want to come back.
-What plans do you have now for Sweden and the USA?
-I'm over the moon about the "Marcus meets Mateus" design collaboration, the opening of Norda and being able to give young chefs the chance to work and develop in New York and Sweden. Seeing them in head positions in kitchens around the country is great.

A mixed clientele
As much as the streets of New York look mixed, so much do the city's churches and restaurants seem uniform. The most important things in life we prefer to do amongst our own kind, right? A shining exception is restaurateur Marcus Samuelsson's latest venture: Harlem's Red Rooster. Here, local families, celebrities and parties from all over the city savour Samuelsson's updated, Scandinavian-African inspired variety of classical American soul food. The pleasantly nostalgic interior is no doubt one reason for its success, Harlem's newly awakened self-assurance another. But most of all it's the guests themselves, of course. The tableware is designed by Teresa Mateus Lundahl and Marcus Samuelsson himself, who drew inspiration from his own Ethiopian background. The stoneware has grooves radiating like flames from an open fire - or perhaps like undulating desert dunes.
"It's about Africa, my roots, but in a modern way," says Marcus. "I also wanted an element of New York in the design."

The dinner service design, named Mateus Meets Marcus, will be launched by Mateus at the Formex design expo in September. It will also feature in a restaurant that Marcus will be opening in Gothenburg's old sorting house early next year.

MARCUS'S RESTAURANT GOES SWEDISH
"Marcus Samuelsson meets Mateus" is the name of Teresa Lundahl's most recent collaboration with the New York-based star chef. Unlike other ceramic ware from Mateus, their dinner service is made in hard-wearing stoneware. First to showcase the new product range is Marcus Samuelsson's latest restaurant - the Red Rooster in Harlem. It was a much written-about super success that could boast Obama and party amongst its guests. So far the irregular lines can be found on plates, bowls and cups.
In the shops in September.
